We can’t estimate these numbers precisely because we don’t have adequate answers to these questions. We need to make educated guesses and use the findings of various studies. One of the many good sources of information comes from a paper by George J. Yancy, Ph.D. published in the journal Nutrition in 2010.
Yancy’s paper, “How much protein is in a serving of hamburger?”, shows the percentage of protein in the meat of a hamburger (the hamburger itself) and the amount of meat it contains. His percentage of protein is based on the meat itself as much as on the proportion of fat in the meat, but the amounts are approximate rather than precise in any way. However, Yancy found that a serving of meat, on average, has 14 grams of protein. There are three major types of meat that contain more protein than the hamburger, beef, and pork (these are red, smoked, and processed beef burgers) (see the table). The most protein-rich meats are pork sausage, ham, and chicken. The leanest meat — the ground beef — has 4.3 grams of protein. It is this protein-rich meat that leads to so many problems in America today. Our protein intakes have declined dramatically in all cases — from 1.2 grams of protein in the 1960s (compared to approximately 2.9 grams today) for the average American, to 0.2 grams to 0.3 grams for the average Canadian, to just 0.2 grams to 0.4 in all adult Australians and 1.1 grams per kg in Europeans, and to about 0.05 grams per kg today in Asians, but the U.S. is still very low. This means that about half of our adults are now eating about the amount of protein that Americans generally consume in their lunchtime or dinnertime fast food servings and that our children are consuming even less protein.
According to Yancy, only about half (48%) of Americans have one serving of meat a day in the morning. About two-thirds (71%) have a meal after a meal. Nearly two-thirds of Americans (72%) eat at least half of their protein daily in breakfast, but only about a third (37%) eat a protein breakfast in the morning.
