This isn’t just some random thing I had in my mind – I tried hard to think of something cool, and I couldn’t find anything that did what I wanted. I tried to make the best of it, however, and came up with such a sweet solution that will make someone with a sweet tooth (the perfect recipe) absolutely happy! We had to make a lot of substitutions – just so the recipe was easy to prepare, the recipe itself, and I’m sure everyone who tries it loves it soooo much.

Pumpkin Seed Butter


Lemon Juice

Vegetable Oil

Chocolate Chips

Chocolate Powder

Almond Flour

Coconut Oil

Maple Syrup

Pumpkin seeds are really high in fat, and if you’re like me, that can make a HUGE mess in the fridge. So I decided that I would make some extra chocolate chips, and I have to tell you – I am so proud of the taste. The crunchy texture of the chocolate chips really helped give the cookie a little extra texture and deliciousness, and they are a huge hit with kids. Just remember, the chip size may vary… if you are using smaller ones, use only half!

How to Make a Vegan Pumpkin Pie

Preheat oven to 350F. Line a loaf pan with parchment paper or greased dish, and set aside.

Put the peanut butter in a microwave safe bowl, and warm on high for 2 minutes.

Add the pumpkin seeds, vanilla, and almond flours, and toss to incorporate.

Add coconut oil and mix until everything comes together.

Fill a large bowl with ice cubes, and put everything into the ice while mixing. The ice will help the mixture stick together.

Add the chocolate chips, and mix just until the chips are all melted and well scattered.

Pour out the dough onto the parchment lined baking dish, and spread evenly into the batter.

Bake for approximately 35 minutes until golden.

If you want to keep the dough in the freezer, take it out, and cut the sheet into squares.

Let cool completely then store it covered in the fridge.
